Sweet N' Smoky Hake with Summer Vegetable Salad

Delight in the bold flavors of our Sweet & Smoky Cape Hake Fillet, where premium hake is seasoned with a tantalizing blend of brown sugar, smoked paprika, garlic, and a hint of cayenne for just the right kick.

Ingredients
Preparation

Main Ingredients:

  • 8 ea Signature Cape Hake Fillet, 4oz
  • 2 tbsp Kosher Salt
  • 2 tbsp Light Brown Sugar
  • 2 tbsp Smoked Paprika
  • 2 tsp Garlic Powder
  • 1/2 tsp Ground Cumin

Summer Vegetable Salad

  • 1 lb Mixed Greens
  • 8 oz Cherry Tomato, halved
  • 8 oz Cucumber, sliced
  • 4 oz Carrots, julienne
  • 1 ea Lemon, wheel

Simple Vinaigrette

  • 2 tbsp Honey
  • 1 tbsp Dijon Mustard
  • 1 ea Garlic, Clove, minced
  • 2 tsp Kosher Salt
  • 2 fl-oz White Wine Vinegar
  • 4 fl-oz Olive Oil
  1. Thaw Hake overnight, under refrigeration & preferably in a perforated drip pan wrapped in plastic. Pat dry with a clean towel or paper towel.
  2. Mix the salt, brown sugar, paprika, garlic powder and cumin together in a small bowl.
  3. Prepare a sheet pan with parchment paper and a light cooking spray. Lay out the fillets in a single layer. Divide the seasoning equally between the eight fillets and lightly sprinkle across each. Bake in a preheated 400℉ oven for 8-10 minutes or until reaching an internal temperature of 158℉
  4. For the Simple Vinaigrette: Add the honey, mustard, garlic, salt and vinegar to a small bowl. Whisk gently to combine. Slowly drizzle the oil into the mixture, while whisking, until thoroughly combined. Reserve for service.
  5. To Assemble: Divide the summer vegetable salad ingredients equally between eight bowls. Drizzle with or serve the simply vinaigrette on the side. Allow the sweet n' smoky hake fillets to cool slightly before serving alongside the salad.
