For the Atlantic Salmon Skewers
- 4 ea Atlantic Salmon Fillets
- 1 ea Red Bell Pepper, diced large
- 1 ea Orange Bell Pepper, diced large
- 8 oz Red Onion, diced
- 8 oz Zucchini, diced large
- 8 ea Scallions
- 1 tbsp Vegetable Oil
- 1 tbsp Kosher Salt
- 2 tsp Ground Black Pepper
For the Honey Barbecue Sauce
- 8 fl-oz Ketchup
- 2 oz Light Brown Sugar
- 2 oz Honey
- 4 fl-oz Cider Vinegar
- 2 tbsp Worcestershire Sauce
- 1 tbsp Dijon Mustard
- 1 tbsp Tabasco Sauce
- 1 tbsp Kosher Salt
- 1 tbsp Ground Black Pepper
For the Creamy Pasta Salad
- 8 oz Cavatappi Pasta, cooked 'al dente'
- 2 oz Celery, chopped

- 4 fl-oz Mayo
- 1 tbsp Dijon Mustard
- 1 tbsp Distilled White Vinegar
- 2 tsp Kosher Salt
- 1 tsp White Sugar
- Thaw the Atlantic Salmon fillets overnight utilizing standard best practices for thawing seafood.
- For the Honey Barbecue Sauce: Prepare the barbecue sauce in advance. Add all of the ingredients to a heavy bottom sauce pan. Bring to a gentle simmer over a medium setting and cook for approximately 20 minutes, stirring often to prevent scorching. Remove from the heat and reserve.
- For the Creamy Pasta Salad: Add the mayo, vinegar, salt and sugar to a large bowl and mix well until fully combined. Fold in the remaining ingredients and reserve under refrigeration until ready for service.
- Assemble & Cook the Salmon Skewers: Cut each Salmon fillet into large bite sized pieces. Using 8 skewers total, begin assembling, alternating between vegetables and Salmon pieces. Finish off each skewer with a folded scallion. Preheat your grill to a medium-high setting. Brush the skewers with the reserved vegetable oil and season with the salt and black pepper. Clean the grill off thoroughly. Place each skewer onto the grill and allow to cook for 2 minutes before rotating to char the other side of each skewer. Cook for an additional 2 minutes and then begin brushing each skewer with reserved barbecue sauce. Cook until the Salmon has achieved your desired internal temperature(145℉-155℉.)
- To Finish: Divide the skewers equally between four serving plates and add a generous serving of pasta salad to each.
