Caprese Mozzarella Stick BLT Wrap, CN

- 100 Each Mozzarella Sticks
- 100 Each Iceberg, Bibb or Romaine Lettuce Leaves, separated
- 50 Slices Fully Cooked Bacon
- 2 ½ lbs Fresh Tomatoes, sliced thin
- 2 ½ lbs Cucumbers, sliced thin
- 1 Cup Italian Dressing
- Prepare the mozzarella sticks: TO DEEP FRY: Preheat fryer to 350°F and fry for 2 minutes 15 seconds. TO BAKE: Place frozen sticks on a lightly oiled sheet pan. CONVECTION OVEN: Preheat oven to 425°F and bake for 6-7 minutes.
- Meanwhile, spread out the separated lettuce leaves individually, place approximately ½ ounce each of sliced tomatoes and cucumbers respectively, as well as a half a piece of fully cooked bacon.
- Top each lettuce wrap with one fully cooked mozzarella stick and drizzle with approximately 1 teaspoon of Italian dressing.
