Summer Herb Hake Greek Salad

Main Ingredients:
- 4 ea Uppercrust Summer Herb Breaded Cape Hake
Salad Ingredients:
- 12 oz Spring Mix
- 1 large Cucumber, diced
- 1 pint Grape Tomatoes, halved
- 1 ea Green Bell Pepper, diced
- 1/2 ea Red Onion, sliced
- 1/2 cup Kalamata Olives, Pitted, & sliced
- 4 oz Crumbled Feta Cheese
- 1/2 cup Banana Peppers
- Salt And Pepper to taste
Greek Salad Dressing:
- 2 oz Olive Oil
- 1 oz Red Wine Vinegar
- 1 ea Lemon, juice
- 1 tsp Dijon Mustard
- 2 ea Garlic, Clove minced
- 1 tsp Dried Oregano
- 1/4 tsp Salt
- 1/4 tsp Ground Black Pepper
- Cook Summer Herb Hake according to case directions.
- Greek Salad Dressing: In a mixing bowl add the vinegar, lemon juice, mustard, garlic, oregano, salt and pepper. Slowly add the olive oil and whisk vigorously until dressing is emulsified.
- Build the Salads: Add mixed greens, cucumber, tomatoes, bell pepper, onion, olives and feta cheese to a large mixing bowl. Drizzle dressing on the salad and gently stir to combine. Season with additional salt and pepper, top with banana peppers and a little more feta.
- Divide salad between four serving bowls. Top each with a fully cooked portion of Summer Herb Cake.
