Summer Herb Hake Greek Salad

Main Ingredients:

  • 4 ea Uppercrust Summer Herb Breaded Cape Hake

Salad Ingredients:

  • 12 oz Spring Mix
  • 1 large Cucumber, diced
  • 1 pint Grape Tomatoes, halved
  • 1 ea Green Bell Pepper, diced
  • 1/2 ea Red Onion, sliced
  • 1/2 cup Kalamata Olives, Pitted, & sliced
  • 4 oz Crumbled Feta Cheese
  • 1/2 cup Banana Peppers
  • Salt And Pepper to taste

Greek Salad Dressing:

  • 2 oz Olive Oil
  • 1 oz Red Wine Vinegar
  • 1 ea Lemon, juice
  • 1 tsp Dijon Mustard
  • 2 ea Garlic, Clove minced
  • 1 tsp Dried Oregano
  • 1/4 tsp Salt
  • 1/4 tsp Ground Black Pepper
  1. Cook Summer Herb Hake according to case directions.
  2. Greek Salad Dressing: In a mixing bowl add the vinegar, lemon juice, mustard, garlic, oregano, salt and pepper. Slowly add the olive oil and whisk vigorously until dressing is emulsified.
  3. Build the Salads: Add mixed greens, cucumber, tomatoes, bell pepper, onion, olives and feta cheese to a large mixing bowl. Drizzle dressing on the salad and gently stir to combine. Season with additional salt and pepper, top with banana peppers and a little more feta.
  4. Divide salad between four serving bowls. Top each with a fully cooked portion of Summer Herb Cake.
