Shrimp Po’ Boy Sliders

Serves: 30 Sandwiches
Ingredients
Preparation
  • 240 each Whole Grain Shrimp Poppers
  • 30 each Miniature Hoagie Rolls
  • 2 lbs Romaine, shredded fine
  • 3 each Large Onions, sliced thin
  • 8 each Tomatoes, sliced thin
  • 2 cups Mayonnaise
  • 1 cup Ketchup
  • ½ cup Relish
  • ¼ cup Yellow Mustard
  1. Prepare the secret sauce by combining the mayonnaise, ketchup, relish and yellow mustard together in a medium sized bowl and whisking well to combine. Reserve under refrigeration.
  2. Prepare the Shrimp Poppers: CONVECTION OVEN: Place oven rack in the center of the oven. Preheat oven to 375°F. Place frozen shrimp in a single layer on a shallow baking pan. Bake for 5-7 minutes. CONVENTIONAL OVEN: Place oven rack in the center of the oven. Preheat oven to 450°F. Place frozen shrimp in a single layer on a shallow baking pan. Bake for 10-12 minutes.
  3. If desired, lightly toast the hoagie rolls
  4. Assemble the Po Boys from the bottom up beginning with the bottom half of a mini hoagie roll. Spread approximately ½ ounce of secret sauce across the bottom bun followed by about ½ cup of shredded romaine, 2 slices of tomato and a couple slices of red onion. Top with about 6-8 shrimp poppers, secure the top half of the hoagie roll with a toothpick and serve.
