Cheddar Biscuit Hake With Mashed Potatoes & Green Beans

Main Ingredients:
- 6 ea Uppercrust Gluten Free Cheddar Biscuit Style Breaded Cape Hake
- 1 ea Lemon, wedge for garnish
For the Green Beans:
- 2 lb Green Beans
- 0.5 Olive Oil
- 2 ea Lemon, zested & juiced
- 1 tbsp Crushed Red Pepper
- Salt And Pepper to taste
For the Mashed Potatoes:
- 4 lb Russet Potato or Yukon gold
- 1/4 cup Salted Butter melted
- 8 oz Milk or cream
- Kosher salt to taste
- Prepare the Hake according to the package instructions.
- For the Mashed Potatoes: Peel and quarter potatoes, place in a pot of cold salted water & bring to a simmer. Cook uncovered 15 minutes or until fork-tender. Drain well. Heat milk on stove top (or microwave) until warm. Add melted butter to potatoes and begin mashing. Pour heated milk a little at a time while using a potato masher to reach the desired consistency. Season with salt.v
- For the Green Beans: In a large stock pot, bring 4 quarts water and 1 tablespoon salt to a boil. Meanwhile, set out a large bowl of ice water. Add green beans to boiling water until tender, but still bright green, about 3 minutes. Transfer to the ice bath to stop the cooking.
- Heat the olive oil in a large saute pan over a medium-high setting. Flash saute the green beans for two minutes. Add the lemon juice, zest, crushed pepper and season to taste.
- To Assemble: Divide the mashed potatoes and green beans equally between six plates. Top each with a fully cooked portion of Hake and garnish with a lemon wedge before serving.
