Cheddar Biscuit Hake & Harvest Apple Salad

Main Ingredients:

  • 6 ea Uppercrust Gluten Free Cheddar Biscuit Style Breaded Cape Hake

For the Apple spring mix salad:

  • 1 lb Spring Mix fresh
  • 2 ea Apples, cored and sliced
  • 0.5 ea Red Onion, sliced
  • 8 oz Walnuts, toasted
  • 4 oz Dried Cranberries

For the Apple Cider Vinaigrette:

  • 2 oz Extra Virgin Olive Oil
  • 2 oz Cider Vinegar apple
  • 2 tsp Honey
  • 1 tsp Dijon Mustard
  • 1 small Garlic, Clove peeled and minced
  • A generous pinch of salt and black pepper
  1. Prepare the Hake according to the package instructions.
  2. For the Apple Cider Vinaigrette: Combine all of the vinaigrette ingredients together in a bowl and whisk vigorously (or shake them together in a mason jar) to combine.
  3. Divide the spring mix, apple, red onion, walnuts, and cranberries between six bowls. Drizzle with the vinaigrette and toss to combine. Top with a portion of fully cooked Hake and enjoy!
  4. Chef's Tip: Add Feta or Goat Cheese for an extra layer of flavor!
