Main Ingredients:
- 6 ea Uppercrust Gluten Free Cheddar Biscuit Style Breaded Cape Hake
For the Apple spring mix salad:
- 1 lb Spring Mix fresh
- 2 ea Apples, cored and sliced
- 0.5 ea Red Onion, sliced
- 8 oz Walnuts, toasted
- 4 oz Dried Cranberries
For the Apple Cider Vinaigrette:
- 2 oz Extra Virgin Olive Oil
- 2 oz Cider Vinegar apple
- 2 tsp Honey
- 1 tsp Dijon Mustard
- 1 small Garlic, Clove peeled and minced
- A generous pinch of salt and black pepper
- Prepare the Hake according to the package instructions.
- For the Apple Cider Vinaigrette: Combine all of the vinaigrette ingredients together in a bowl and whisk vigorously (or shake them together in a mason jar) to combine.
- Divide the spring mix, apple, red onion, walnuts, and cranberries between six bowls. Drizzle with the vinaigrette and toss to combine. Top with a portion of fully cooked Hake and enjoy!
- Chef's Tip: Add Feta or Goat Cheese for an extra layer of flavor!
