Breaded Pollock Teriyaki Noodle Stir Fry, CN

- 180 each Breaded Alaska Pollock Bites CN
- 4lbs Dried Lo Mein Noodles
- 2lbs Carrots, shredded or matchsticks
- 2lbs Bell Peppers, cleaned and sliced
- 4 oz. Vegetable Oil
- 2 cups Prepared Teriyaki Sauce
- 2 cups Scallions, minced
- Cook the Lo Mein noodles according to their package instructions. Strain, rinse, coat in a small amount of vegetable oil to prevent sticking and reserve.
- Prepare the Breaded Alaska Pollock: TO BAKE: Place frozen fish bites on a lightly oiled baking pan. CONVECTION OVEN: Preheat oven to 375°F and bake for 13-15 minutes. CONVENTIONAL OVEN: Preheat oven to 400°F and bake for 15-16 minutes
- Meanwhile, in a large rondeaux or heavy bottomed pot heat the vegetable oil over a medium-high setting. Add the carrots and bell peppers to the pot and cook for approximately 2 minutes.
- Add the reserved lo mein noodles and the teriyaki sauce before tossing and mixing well.
- Remove from the heat and plate each serving with approximately 2 ounces, or 1 cup, of cooked noodles and veggie accompaniment. Place 6 fully cooked Pollock Bites atop the noodles and garnish with scallions if desired.
