Homestyle Breaded Whiting With Garden Salad & Citronette

- 4 ea Homestyle Breaded Southern Blue Whiting Portions
For the Salad
- 8 oz Mesclun Mix
- 2 oz Purple Cabbage shaved thin
- 2 oz Red Onion, sliced
- 2 oz Heirloom Cherry Tomatoes halved
- 2 oz English Cucumber, sliced quartered and sliced
- 2 each Avocado, sliced
- 1/2 cup Chives, chopped
- 8 each Radish, trimmed sliced thin
- 1/4 cup Parsley, chopped chopped
- 4 oz Goat Cheese
For the Citronette
- 4 fl-oz Lemon, juice reserve zest
- 2 tbsp Dijon Mustard
- 2 fl-oz Extra Virgin Olive Oil
- 1/4 tsp Kosher Salt
- 1/8 tsp Ground White Pepper ground white pepper
- Prepare the Homestyle Breaded Southern Blue Whiting according to the package instructions. Reserve and allow to rest once fully cooked.
- For the Citronette: Add the lemon juice (along with zest), Dijon mustard, olive oil, kosher salt and white pepper to the bowl of a food processor or blended. Process on high for 30 seconds until fully combined. Transfer to a squeeze bottle and chill.
- To Complete the Salad: Equally divide all of the ingredients for the salad between four entree sized dinner plates. Artfully arrange the ingredients and drizzle lightly with the chilled citronette. Top with a fully cooked and rested portion of Whiting before serving.
