Homestyle Whiting With Mediterranean Orzo

Preparation

For the Homestyle Breaded Whiting

  • 4 ea Homestyle Breaded Southern Blue Whiting Portions

For the Yellow Pepper Vinaigrette

  • 3 ea Yellow Bell Peppers, diced charred oven an open flame before dicing
  • 2 fl-oz Olive Oil
  • 8 fl-oz White Balsamic Vinegar
  • 1 each Lemon zest and juice
  • 1/4 tsp Kosher Salt
  • 1/8 tsp Ground White Pepper use white to eliminate specks

For the Mediterranean Orzo

  • 12 oz Orzo Pasta
  • 1 tbsp Turmeric Powder
  • 1 tsp Olive Oil
  • 4 oz Heirloom Cherry Tomatoes halved
  • 4 oz Kalamata Olives, Pitted halved
  • 6 oz Baby Spinach
  • 8 oz Yellow Bell Peppers, diced char over an open flame before dicing
  • 2 oz Feta Cheese, crumbled Cheee
  • 0.5 oz Parsley, chopped
  • 0.5 oz Oregano, chopped
Tips from the chef: After developing such a delightfully crispy exterior on your fish, allow it to drain and rest on a wire rack, not paper towels. The wire rack will assure that your fish stays crispy where using paper towels can create steam and sadly make your crispy fish soggy.
  1. For the Homestyle Breaded Whiting: Prepare the Homestyle Breaded Whiting according to the package instructions.Once fully cooked, allow to rest on a wire rack and cool slightly.
  2. For the Yellow Pepper Vinaigrette: Add all ingredients to the bowl of a blender and process on high for approximately 30 seconds or until fully blended and emulsified.
  3. For the Mediterranean Orzo: Add the turmeric powder and 1 tsp of olive oil to a medium sized pot along with2 quarts of water. Bring to a simmer, add the Orzo and cook until al dente, approximately 6 minutes. Strain and allow to cool. In a large bowl, gently toss together the cooked orzo along with the remaining ingredients and approximately 1/2 cup of the reserved yellow pepper vinaigrette.
  4. To Finish: Divide the Mediterranean Orzo equally between four entrée plates and top with a fully cooked and rested portion of Homestyle Breaded Southern Blue Whiting. Either dress with the yellow pepper vinaigrette, or serve sauce on the side, as pictured here.
