Mini Fire Roasted Italian Cod Broilers
To appeal to the growing dining population of Millennials, innovation on sharable appetizers is a constant focus. This recipe takes a classic ‘Cod au Gratin’ and a refreshes it for a new generation to share and enjoy. To save time for the back of the house while also injecting bold Italian flavours, I used our Fire Roasters™ Rustic Italian Cod from frozen and sliced thinly. In order to increase speed of service this recipe can be easily prepped ahead.

- 2 pcs Fire Roasters™ Rustic Italian Cod Loins
- 4 small potatoes
- 750 ml prepared culinary cream like Knorr
- 2 cups shredded parmesan cheese
- ¼ cup chopped parsley
- salt & pepper to taste
- flatbread
Tips from the chef: With a total food cost of approximately $1 per mini cod broiler, this is a highly profitable sharable appetizer that is extremely easy for your kitchen staff to prepare.
- Prepare culinary cream to thick consistency – 150 g to 3 cups water.
- Boil potatoes until tender then slice thinly.
- Using cleaver or large chef knife, slice from frozen Fire Roasted Italian Cod into ¼inch thick pieces.
- Assemble the broilers by spooning in an ounce of cream into the bottom of each small baking dish then layer in potato until half full. Top with one more ounce of cream and sprinkle shredded parmesan cheese.
- Top with 3 to 4 slices of Fire Roasted Italian Cod, one last dollop of cream and small sprinkle of chopped parsley.
- Bake in 375°F convection oven for 10 mins. Broilers will be golden brown and bubbling with perfectly cooked Cod on top.
- Warm flatbread on grill and slice for service.
