BUFFALO SHRIMP QUESADILLA

A contemporary Mexican favorite comes together in minutes with this delicious Buffalo Shrimp Quesadilla. Sautéed veggies and melty Mexican cheese blend pair perfectly with the subtle kick of these Buffalo seasoned Shrimp. Throw them all together in a large flour tortilla and cook until toasty for an instant appetizer or entrée hit that will leave your guests craving more.

Ingredients
Preparation
  • 16 each OvenCrunch Breaded Shrimp, Buffalo Style
  • 2 each Flour Tortillas, approximately 12”
  • ½ cup Bell Peppers, julienne
  • ½ cup White Onions, julienne
  • 1 tsp. Ground Cumin
  • 1 tsp. Paprika
  • ½ tsp smoked paprika
  • 2 tbsp. Cilantro, chopped
  • ½ cup Shredded Tex Mex Blend Cheese
  • ¼ cup Vegetable Oil, divided in half
  1. Prepare the Buffalo Shrimp according to the package instructions. Cook to an internal temperature of 145℉. Deep Fry: Preheat the fryer to 350℉ and deep fry for 2.5-3.5 minutes. Do not overload fryer. Convection Oven: Preheat oven to 425℉ and bake for 10-12 minutes, flipping over halfway through. Conventional Oven: Preheat oven to 450℉ and bake for 12-14 minutes, flipping over halfway through. To Air Fry: Set air fryer to 400℉ and cook for approximately 7 minutes.
  2. Sauté peppers and onions with 1 tbsp of veg oil, cumin, paprika and coriander. Season to taste
  3. In a large pan sauté the peppers and onions along with 2 tbsp. of the vegetable oil over medium-high heat for 2-3 minutes until translucent. Add the cumin, paprika, cilantro and toss.
  4. Lay out the tortillas on a flat surface and fill each with approximately half of the sautéed vegetables, half of the cheese and 8 fully cooked Buffalo Shrimp. Fold the tortillas over.
  5. Cook the tortillas in a preheated sauté pan over a medium setting for approximately 5 minutes, flipping halfway through, until golden brown and slightly crispy.
  6. Slice into wedges and serve with sides of sour cream & salsa.
